Kershaw Shun Knife

Kershaw Shun is perhaps the most well known Japanese knife maker. They have been around since 2002 and are praised for their craftsmanship, a Kershaw Shun knife is normally a thing of beauty.

A Kershaw Shun knife is normally high-carbon stainless steel. However, they tend to use much harder steel than normal knives. This allows the Shun knife blade to be set at a 16 degree angle, instead of a 20 degree angle. This keeps the Shun knife blade much sharper than a normal blade.

Many chefs and foodies, including Alton Brown of Food Network Good Eats fame, swear by the Kershaw Shun knife.

Be warned though, with all this attention comes a hefty price tag for most Kershaw Shun knives.

Kershaw Shun Ken Onion Knife

The Shun Ken Onion knife is also designed by a master bladesmith, this time it's Ken Onion. They typically have flowing, ergonomic designs. While not quite as expensive as the Shun Bob Kramer, the Shun Ken Onion is still very pricey.

Shun Elite Knife

The Shun Elite Knife is made using harder steel than the Shun Classic allowing the blade to stay sharper for longer. They are also hand crafted in Japan. They make very nice all purpose knives.

Shun Classic Knife

The Shun Classic Knife is the "bottom of the line" Shun knife, to use that term very loosely. The Shun classic line is made of VG-10 steel, which is softer than the other Shun knives but still harder than most other knife brands. The classic is Shun's most popular line of knife and is a wonderful knife with a price tag much more inline with other knife brands.
