A carving knife is normally around 8 to 15 inches long. It is a much thinner knife than a chef's knife and usually has a Granton edge, which has scallops along it.
Uses of a Carving Knife
Since a carving knife is so thin it is ideally suited for slicing thin cuts of meat, especially roast chickens or turkeys, as well as roasts and hams. There's nothing quite as homey as slicing the turkey at the table during Thanksgiving in front of the family and a good carving knife can allow you to do that.
